Best Banana Phirni Tartlets with Fresh Strawberries Recipe

Ingredients:

For the tartlets:

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1-2 tbsp cold water

For the phirni:

  • 1/2 cup basmati rice
  • 2 cups whole milk
  • 1/2 cup condensed milk
  • 1 ripe banana, mashed
  • 1/4 tsp cardamom powder

For the topping:

  • Fresh strawberries, sliced

Instructions:

  1. To make the tartlet dough, combine flour, powdered sugar, and salt in a mixing bowl. Add in chilled butter and use your fingers or a pastry blender to cut the butter into the flour mixture until it resembles coarse crumbs.

  2. Gradually add cold water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into 6-8 equal portions and roll each into a ball. Flatten each ball into a disc and press them into tartlet molds. Prick the bottom with a fork and refrigerate for at least 30 minutes.

  3. Preheat the oven to 350°F. Bake the tartlets for 15-20 minutes or until they turn light golden brown. Allow them to cool.

  4. To make the phirni, wash and soak the rice in water for at least 30 minutes. Drain the rice and grind it into a fine powder.

  5. In a heavy-bottomed saucepan, heat milk and condensed milk over medium heat. Add in the rice powder and whisk until no lumps remain. Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon.

  6. Add mashed banana and cardamom powder to the phirni and mix well. Turn off the heat and let it cool.

  7. Pour the phirni into the cooled tartlet shells and refrigerate for at least 30 minutes.

  8. Before serving, top the tartlets with sliced fresh strawberries. Enjoy!
